Grease a baking dish with butter or cooking spray. Layer half of the sliced potatoes evenly on the bottom of the baking dish. Season with salt, pepper, garlic powder, and dried thyme. Sprinkle half of the shredded cheddar cheese over the potatoes., Grease a 9×13 inch baking dish with butter or cooking spray. Layer the potato slices in the dish, slightly overlapping each other. Pour the roux over the potatoes, making sure to cover each layer evenly. Repeat the layering process until all of the potatoes and roux have been used.
