I used David Lebovitz' recipe for honey ice cream (available on his website) and added a bunch of fresh lavender flowers after adding the honey then put it in the fridge. I tasted the base after about 4 hours and even though I kept your post in mind, I couldn't imagine this turning bitter so I left the lavender in overnight.
